                                                                   Salad
Salad can be defined as the cold dish served with or without dressing that can be a cold dish of vegetables,fruit,meat,cheese,poultry,fish or the combination of all these ingredients. It is basically served as the first course of meal in small quantities. It is crunchy  and crispy in nature which consists of most of the necessary diet. It is moreover served as salad course or as accompaniments. In short it is the perfect food which can be served at any time. So here are some wonderful recipes of some popular salad given below.
Spring salad
Ingredients
Cheese basket
Great Yak cheese,mix with some finely chopped parsley and put it in the flat silicon mat and melt in the salamander or oven. When cheese is fully melted,take out wrap around the outside of the small glass and keep in the freezer until it is cold and hadened.
Green spinach leaves                             30gm        
Green lettuce                                             40gm     
Juliene of cut vegetables                       100gm      
Fresh pinapples slice                              40gm        
Cashew nut                                                  15gm
Orange juice                                                 60ml
Salt                                                                    To taste
Pepper                                                             To taste
Olive oil                                                           30ml
Sesame oil                                                      30ml
Honey                                                               30ml
Di-jon Mustard                                              1 Teaspoon                                        
Mayonnaise sauce                                       1/2 Teaspoon

Method
Take a large size bowl and stock with fresh spinach,lettuce,sliced pinaple, Julienne of vegetbles and the cashew nuts. Mix them well.
Now take a separate bowl and pour the orange juice,honey,salt,pepper and Dijon Mustard. Toss everything until well mixed.
Pour olive and sesame oil in the blend until well mixed.
Put mayonnaise in the centre of a plate and place the cheese basket on top to stop it from moving.
Add all the mixture in the basket. At the end place the croutons on top of the salad and with German Bread.


                                                                    Nicoise Salad
Ingredients
Boiled potato(diced)                                                       100gm
Blanched green bean                                                       200gm
Tomato                                                                                   100gm
Shredded bell pepper(red capsicum)                       50gm
Vinaigrette dressing                                                         1 tbl. sp.
Anchovy fillet                                                                      10gm
Caper                                                                                       5gm
Stoned black olive                                                             10gm
Lettuce leaf                                                                           1 no.
Seasoning salt and pepper
Method
Blanch the tomatoes, peel them, remove the seeds and cut into wedges.
Cut the beans into diamond shape.
Season the beans, tomatoes, and potatoes with salt and pepper.
Arrange om the bed ot lettuce in a wooden bowl attractively.
Decorate with capsicum, anchovy, capers and olives, and serve cold.
Avocado and Onion Salad
For dressing
3 lemons
2 jalapeno chillies
75ml olive oil/extra virgin olive oil
1 1/2 teaspoon sugar
1 large onion
4 nos. Avocado
225 gm fresh cilantro spring
Make dressing
Squeeze enough juice from lemons. Wearing protective gloves, coarsely chop chillies with lemon juice, oil,sugar, and salt and pepper to taste.
Dressing may be made 2 days ahead and chilled in an airtight container.
Cut onion in half through stem end and thinly slice crosswise. Halves avocados lengthwise and remove the seed. Peel avocados and cut length wise into 1/4 inch-thick slices.
Arrange avocado, onion, and cilantro springs on a platter and season with salt and pepper. Drizzle dressing over salad. Serves 8.
